1 loaf(s) (8 ounces) Italian bread
1 clove(s) (large) garlic, cut in half
1 1/4 pound(s) (8 medium) ripe plum tomatoes, seeded and cut into 1/4-inch pieces
2 tablespoon(s) fresh basil leaves, thinly sliced
2 tablespoon(s) extra-virgin olive oil
1/4 teaspoon(s) salt
1/8 teaspoon(s) ground black pepper

1.Preheat oven to 350 degrees F. Meanwhile, slice bread diagonally into scant 1/2-inch-thick slices; reserve ends for making bread crumbs another day. Place bread slices on 2 cookie sheets.
2.Toast bread on 2 oven racks 15 minutes or until crusty and dry, turning slices over once and rotating cookie sheets between upper and lower racks halfway through baking. Transfer bread to wire racks to cool slightly. When bread is cool enough to handle, rub 1 side of each toast slice with cut side of garlic. Discard garlic.
3.Meanwhile, in small bowl, gently toss tomatoes, basil, oil, salt, and pepper until combined.
4.To serve, spoon 1 heaping tablespoon tomato mixture on garlic-rubbed side of each toast slice.

I like to put a little parmesan or mozzarella on and put in oven to melt a little

brushetta.odt here is the recipe for Brushetta. it takes 30 minutes total. I like to add a little real grate your own parmesan.

you mentioned..."The quickest recipes lately for me involve bread and that to an oriental like yourself is probably not appealing." well, i love bread:)!!! :o lived in germay for while & i miss the brochten? maybe i mispelled it.

I am baking granola cookies. All this granola hanging around and not getting used. so I went on line and found a recipe. they smell good cooking. I think it might be because the granola had some flavor common to bakers. Oh well I will enjoy with my coffee and some late night ice cream. Yikes here come the calories!

Kumi, The quickest recipes lately for me involve bread and that to an oriental like yourself is probably not appealing. I like taking some good white bread, from a small baker, dipping it in oilive oil and balsamic vinegar and then having a few pieces of parmasan cheese or salami or procuitto. then of course have some good olives handy.

Bought pre-cooked packages of meatballs --(used two pgks.)
I didn’t use spicey ones

Brown meatballs in skillet

SAUCE: (separate bowl) mix both ingredients & pour over meatballs)
12 oz. bottle BBQ sauce
10 oz. grape jelly
